Bean dip is an easy and yummy appetizer. It is a good appetizer for a cocktail or a snack party. People will definitely like it. I bought this Magic Bullet blender recently and tried a few dips and quick dishes from the recipe book. I am very eager to share the recipes with you all. So I have started with the bean dip. Here you go…
Ingredients:
- Black beans - 1 can
- Chopped onion - 1/4 cup
- Garlic cloves - 2
- Roasted red peppers - 1/4 cup
- Vegetable broth - 1/2 cup
- Balsamic Vinegar - 2 tbsp
- Cayenne pepper to taste
- Dollop of sour cream (optional)
Method of Preparation:
Preparation of Roasted Red Peppers:
- Preheat oven to 350ºF.
- Take a whole red pepper and keep it on an aluminum foil in the oven. Rotate it once the top side gets back spots.
- Cook the whole pepper until they have blackened spots and blisters all over and is tend

It’s been a very long time I’ve posted any recipes. I am really sorry about my sparse posting. My new year resolution is to be more active here and bring you lot more recipes from my kitchen. When I first came to U.S one of my first favorite Mexican dish was Quesadilla. We just bought this quesadilla maker in the Thanksgiving shopping. Before that I used to bake this in a conventional oven but Quesadilla maker has made my life easier. Try this easy Quesadilla recipe and let me know how it turned out.
Ingredients:- Vegetable Oil : 2 tbsp
- Onion: 1
- Red Bell Pepper : 1
- Green Bell Pepper: 1
- Mushroom : 1 cup (Optional)
- Chicken : 1 cup (Grilled or Cooked)
- Salsa: 1 cup

Yesterday I was wondering what to cook for dinner. I had lots of bread sitting in my pantry. So I was browsing for a sandwich recipe. I came through a lot of recipe and I got confused. So I mixed and matched some recipes and tried this ‘Grilled Veggie Bread’. My husband and I liked it very much and it is healthy too if you avoid the cheese. Even I tried it without cheese and it was tasty. It is easy to make and simple. Here you go…Ingredients:
- Bread slices - 8
- Black Beans - 1 can
- Tomatoes - 2
- Chopped onion - 1 cup
- Chopped Jalapenos - 1/4 cup
- Grated Mozzarella/Cheddar/Parmesan cheese - 1/4 cup
- Salt and Pepper
Method of Preparation:
- Preheat oven to 350°F.
- Keep the bread slices on a baking tray and toast it in the preheated oven till it becomes golden brown.
- Toast the other side of the bread the same way.
- This may take 10 to 15 minutes
